Jaggery (gur) is a natural, traditional sweetener made by concentrating sugarcane juice and is known all over the world by different local names. India is the largest producer and consumer of jaggery. Jaggery powder contains about 85 % carbohydrate. Good quality gur contains more than 70% sucrose, less than 10% of glucose and fructose. Jaggery also contains minor amounts of several minerals (5 %) such as calcium, iron, magnesium, phosphorous and potassium. Sugarcane juice and its unrefined products such as brown sugar, molasses, and jaggery are sources of phenolic compounds, such as, phenolic acids, flavonoids, and different glycosides. These phytochemicals may exhibit some antioxidant activity and other potential health benefits. The demand for jaggery is steadily growing in urban areas also as a healthy alternate to white sugar.
