The plunger switches work by being pressed inward when a door is closed. Most door contacts, whether they are recessed or surface-mount, operate using a sensor and a magnet.
Plunger switches operate with little physical force. When the plunger/actuator is pressed, it either opens or closes the electrical circuit turning the device which it is powered to on or off.
The sensor is installed on or inside the door's frame.
