Take 1 kg samba rice and rinse it with water. In a pan add water and required salt 1 tsp of ghee cinnamon 1 inch, 2 star anise, 2 bay leaf, 5 cardamom and 5 clove. Boil until half cooked. Strain excess water and set aside. Take 100ml oil and 100ml ghee in a heavy bottom vessel.
Add 3 chopped onion, 2 tbsp of ginger garlic paste, 2 chopped tomato and stir well. Add 1 kg of chicken / mutton pieces, 3 tsp of the spice club thalassery biryani masala, 100ml of curd, ½ lemon juice, required salt and stir well for 2-3 min in medium flame. Add enough water to cover the chicken/ mutton and cook for 15-20 min in medium flame.
Sprinkle the prepared rice on top of the gravy without stirring. Garnish with golden fried onion, cashew-nut saffron and pour the sautéed oil on top of the rice. Close the vessel with extra weight on top of the lid. Place the vessel on top of the tawa in low flame for 15-20 min. Now the tasty The Spice Club Thalassery Biryani is ready to serve.
