Vinegar made from Modena wine (Italy) after maceration in barrel. It enhances the flavour of any meat, especially veal and duck. It is also an excellent ingredient in vinaigrette dressings for smoked fish (trout, salmon, etc.)
Balsamic Vinegar can be used for regular cooking and is also a great preservative. It is made wholly or partially from grape juice with all the skins, seeds and stems.
